Grain, mash at 153F for 60 min:

1.25 lbs Crystal 60
0.25 lbs Crystal 80
0.25 lbs Chocolate Malt

Hops, 90 min boil:
2 oz Mt Hood, FWH
1.5 oz Nugget, 60 min
2 oz Cascade, 10 min

Batch 52, Pale Ale

Another variation on a basic Pale Ale.

10 gallon batch.

Grain:

19.5 lbs 2-row
1.0 lbs Crystal 60
1.0 lbs Carapils
0.5 lbs Crystal 10

Hops:
0.5 oz Galena, 60 minutes
0.5 oz Nugget, 60 minutes
2 oz Centennial, 15 minutes
2 oz Mt Hood, 15 minutes

Wyeast 1272 from batch 51.

Batch 51, Panama Red

Need I say more? This is the best beer, period!

10 gallon batch.

Grain:
20.25 lbs 2-row
1.5 lbs Crystal 80
0.5 lbs Chocolate malt

Hops:
2 oz Mt Hood, FWH
1.5 oz Galena, 60 minutes -- I was out of Nugget, the Galena was fine for bittering
2 oz Cascade, 10 minutes
2 oz Cascade, 5 minutes
2 oz Mt Hood, 5 minutes

Wyeast 1272

OG: 1.060

I was out of Nugget, so I used some fresh Galena (whole) that someone picked up from the hop tour that the brew club attended. About half of the Cascade was homegrown in Black Diamond.

Batch 50, Vanilla Porter

Just a basic Porter. I like Porter. Added vanilla beans to this batch, yummy!

10 gallon batch.

Grain:

18 lbs 2-row
2 lbs Chocolate malt
3 lbs Crystal 40? 60? didn't write it down
1.5 lbs wheat

Hops:

1 oz Galena, 60 minutes
1.5 oz Cascade, 30 minutes
2.0 oz Tettnanger, 5 minutes

Wyeast 1272

OG: 1.065
FG: 1.015

Sep 15, added 1 vanilla bean per keg.

Batch 49, IPA

I've done this one before, I'm sure it had a fancy name, but it's just a nice IPA.

10 gallon batch.

Grain, mash at 153F for 60 minutes, collect 12 gallons:

23 lbs 2-row
1 lb Crystal 40
1.25 lbs Wheat

Hops, 90 minute boil:

2.0 oz Nugget, 60 minutes
2.0 oz Mt Hood, 10 minutes
2.0 oz Cascade, 10 minutes

Wyeast 1272 from batch 48.

OG: 1.066
FG: 1.011

1st keg not so great, drinkable, though.
2nd keg added 1.5 oz Centennial dry hop, Sep 20.

Batch 48, Panama Red

I think I'm done tweaking this recipe. This is perhaps the best beer I've ever made, and perhaps the best beer I've ever drank.

10 gallon batch.

Grain, mash at 153F for 60 minutes, collect 12 gallons:

1.50 lbs Crystal 80
0.5 lbs Chocolate malt

Hops, 90 minute boil:

2 oz Mt Hood, FWH
1.5 oz Nugget, 60 minutes
2 oz Cascade, 10 minutes
2 oz Cascade, 5 minutes
2 oz Mt Hood, 5 minutes

Wyeast 1272 from batch 44.

OG: 1.064

Yeah, best beer ever!

Batch 47, Irish Death

Nick picked this recipe out of a book I have. I didn't have the ingredients, so I improvised. This won at a club competition for "Imperial Anything". Entry in the contest was anything with ABV of 10% or better, this came in at 11.3%.

5 gallon batch.

Grain:

15 lbs 2-row
7.5 lbs wheat
0.75 lbs Crystal 10
0.5 lbs Black Patent
0.5 lbs Chocolate malt
Mash at 152F for 60 minutes, collect 6.5 gallons.

Hops, 90 minute boil:

1.0 oz Nugget, 60 minutes
0.5 oz Mt Hood, 30 minutes
1.0 oz Mt Hood, 10 minutes
0.5 oz Cascade, flame out
1.0 oz Columbus, flame out

Stir in 3/4 cup Molasses at flame out.

Wyeast 1272 from batch 43.

OG: 1.105
FG: 1.020
ABV: 11.3%

Fermented 2 weeks in a plastic bucket, then transfered to a corny keg. Stored at 66F until May 22, 2008, then put in refrigerator with CO2 at 10 lbs. Strong, tasty beer.

Batch 46, Pale Ale

This is a real simple pale ale recipe, nothing fancy, but really good.

10 gallon batch.

Grain:

16.5 lbs 2-row
1.5 lbs Crystal 40
1.0 lbs Wheat

Hops:

1.0 oz Nugget, 60 minutes
2.0 oz Mt Hood, 15 minutes
2.0 oz Cascade 15 minutes

Wyeast 1272 from batch 43

Apparently I forgot to get gravities on this, but it looks like OG should have been about 1.050.

3.5 lbs wheat
1.5 lbs Quaker oats
0.5 lbs honey
3.5 lbs Munich 30

Hops:

2 oz Tettnanger, 90 minutes
1 oz Tettnanger, 30 minutes
2 oz Tettnanger, 5 minutes
1 oz Mt Hood, 5 minutes

Wyeast 1272

OG: 1.061
FG: 1.015

I don't know what happened with this batch, half was excellent, the other half sucked. I'm wondering if I accidentally used WD-40 instead of silicone on one keg?


This is such a nice recipe! Smooth and refreshing.

Batch 44, Panama Red

This is the same as batch 35, again. Someone on the Northern Brewer forum asked about how long it takes for each step of the brewing process, so I wrote down my times on this batch.

8 am, started
8:05, HLT heating water
Grinding grain while HLT heating
8:35, HLT at 165F
8:40, mash in with 30 qts
Weigh hops while mashing
9:40 start sparge, Mt Hood FWH
10:00 start burner for boil
10:25 boiling
10:50 added Nugget hops
11:20 added Perle
11:40 added Cascade
11:50 added Cascade
12:00 began chilling
12:35 transfer to fermenter
Cleanup
12:55 All done

This is a good pale ale recipe. Like most of my beers, it's a little on the hoppy side.

Batch 41, Panama Red

It's been about 5 months since I brewed last. We finally got moved, and I got my brewing equipment unpacked. I ordered a new package of Wyeast 1272 from Northern Brewers.

This batch is the same as batch 35, except I used 2 oz Cascade and 1.5 oz Mt Hood at flame out.

FG: Forgot to get it, does it really matter?
